Recently,I came up with a recipe for a delicious thai peanut sauce which I have mixed with vegetables or noodles to create a quick and easy lunch. So with tofu on hand, I whipped up some tofu and smothered it in the thai peanut sauce. That’s all I had for lunch but it if so filling, and because tofu has a meaty consistency, I like replacing meat with tofu.
The ingredients are very simple:
- 1/2 block tofu
- 1/8 c. water
- 1 1/2 tbsp. peanut butter
- 1 tsp. honey
- 1/4 tsp soy sauce
- 1/8 tsp chopped garlic
- 1/4 tsp sriracha sauce
- spring onions to top off
Cut the tofu into 1 x 1 in. squares and pan sear it with some oil until brown on both sides. Set the tofu aside. On low heat, pour in the water, then add peanut butter and honey, until it melts. Add garlic and stir. Then add the soy sauce and sriracha sauce and cook until all combined. Throw in the tofu and enjoy!
