I am starting a new series called Lunch Ideas in which I will present a protein-packed and filling meal for lunch. I eat pretty hearty lunches on a daily basis so I will share these delicious and lip-smacking dishes. Today’s lunch was very simple, but filling. Interestingly, there were only two colors on my palette: green and brown.
- Toast with creamy guacamole and roast beef.
- Seedless organic green grapes
- salt and pepper pistachios
The grapes and pistachio obviously require absolutely no preparation. However, the guacamole is mixed with 1/4 c. of greek yogurt to give it a creamy texture. I didn’t go with a full out guacamole recipe with tomatoes, onions, peppers, etc. but I seasoned my guac with cumin, salt, cayenne pepper, and garlic powder. I chopped up one piece of roast beef and spread it over the toast.
