Fruit is the star of the meal. There is a conglomeration of fruits sitting in my kitchen, and rather than letting them sit there and rot, I decided I will make fruit the main course of my lunch! Today’s lunch menu is rather large because I am preparing the meal for two people. There are 3 components, but each is super simple, energy packed, and heart healthy!
Fruit Bowl: 6 strawberries cut in half, 1 sliced banana, and 1 sliced white peach all tossed into a bowl and drizzled with a bit of honey.
Pesto Pasta salad: Cooked pasta tossed with store bought pesto
Black bean burrito (recipe for 1 burrito): 2 tbsp. of canned black beans and 1 tbsp. low fat turkey chili, 1 tbsp. shredded cheddar cheese, 1 tsp. greek yogurt, 1 whole wheat tortilla. Put whole wheat tortilla in pan and shredded cheese on top until cheese is melted. Add heated black beans and turkey chili for about 30 seconds. Take off pan, add greek yogurt, and roll up into burrito.
Note: Greek yogurt is a fabulous, multifunctional ingredient to keep in the kitchen. After I discovered greek yogurt, I fell in love with it and now I keep it as a staple in my diet. It is not a cheap product, about $7 for a huge tub of Fage yogurt at Costco, but it adds so much flavor without the fat. Because of these benefits, I advise everyone to eat greek yogurt more often!
