Hong Kong Mango Crepe


Typically when great foods coalesce, an even greater product is produced. This is certainly true for mango crepes. However, not just any crepe, but rather a Hong Kong Style Mango crepe which marries 3 wonderful foods together to form the paradigm of beauty. It is simple to make, but the Hong Kongese novel presentation of the crepe differs from the way the French would present and it is far from banal.

The pop of orange from fresh mangoes is appealing to the eyes and taste buds, and the overall presentation resembles a soft boiled egg. It is just beautiful when done correctly and I am sharing my recipe with you to today so you can impress your friends and family.

Hong Kong Style Mango Crepe


yield: 3 crepes

Ingredients:

  • 2 tbsp. all purpose flour
  • 4 tsp. corn starch
  • 1 tbsp. powdered sugar
  • 1/3 c. milk (1 or 2 % fat)
  • 1 large egg
  • 1 tsp. melted butter
  • 2 mangos
  • Approx. 3/4 c. whipped cream (like Rediwhip), or you can whip your own

Directions:

  1. Sift together flour, corn starch, and powdered sugar into a medium bowl. Whisk in the milk, egg, and melted butter and pour through the sift so that the batter is smooth.
  2. Heat a pan (10 in.) on low heat and grease the pan. Pour the batter in a cover the pan so that the batter is thin and covers the whole 10 in. diameter of the pan.
  3. Cook for about 1-2 min and then flip to the other side and do the same. Place on a plate and allow to cool. Repeat 2 more times.
  4. Take the mangos and cut off the 2 large sides and run the mango side down the edge of a cup so that a you are left with a large piece of mango. Trip the ends and edges of the mango slice and shape is so that the mango fits into the crepe. (Please watch video for clarifications on this step).
  5. Once the crepes have cooled, spoon 1/4 c. whipped cream onto one crepe in the middle and place a mango chunk (down side up) on the whipped cream. Fold the four sides of the crepe in, flip the crepe over, and repeat for the other 2. Place the crepes into the freezer and allow to freeze for at least 45 min.
  6. Take the mango crepe out and cut in half and enjoy.

In my photos, I sprinkle a bit of powdered sugar and some crushed pistachio pieces for color contrast. I guarantee you that these mango crepes will whet anybody’s appetite so what are you waiting for? Get to cooking!
