Healthy Two-Bite Brownies (Vegan + GF)


Two-bite brownies are extremely addicting, especially due to their cute and miniature shape. If I am feeling particularly happy, I will purchase one container at wholesale and munch on them ALL DAY LONG. They’re obviously not healthy but I can’t help myself.

I have put time into coming up with a recipe for healthy two-bite brownies so that I can satisfy my craving and sweet tooth without consuming all the flour, sugar, and other additives. I’m excited to say that I came up with a simple 3-ingredient recipe that is delicious and full of clean ingredients. Additionally, it’ll be hard to believe but these two bite brownies are vegan, gluten-free, and naturally sweetened! So yes, you can go ahead and eat raw brownie batter.


Healthy Two Bite Brownies

yield: 12 brownie bites

Ingredients:

  • 1 c. VERY RIPE mashed banana or sweet potato*
  • 1/2 c. natural nut or seed butter (I used a nut butter blend called NUTTZO.)
  • 1/4 c. cocoa powder

*I used a very ripe banana and the brownies turned out to be very sweet, so no additional sugar was needed. However, feel free to taste the batter (Yes, you can taste it raw since there are no eggs!) and add any additional sweetener of choice if needed. Add about 1 tsp. at a time and taste and test. A ripe banana is sweeter than a sweet potato so if you are using sweet potato, keep that in mind. Do not use banana if you do not like bananas because the banana flavor will be distinct. For a more neutral flavor, use sweet potato.

Directions:

  1. Preheat oven to 350 F and grease a mini muffin pan.
  2. In a bowl, combine all ingredients and pour into muffin pan. Bake in the oven for about 25 minutes or until cooked through.
  3. Enjoy fresh out of the oven or allow to cool at room temperature. Cooling the brownie bites will create a fudgier texture.

Enjoy these brownie bites with a cup of cold milk! Brownie bites are convenient for breakfast or a snack on the go. These bites are a good option for breakfast since they are essentially made of nut butter and bananas. I cannot stop munching on these as I am already on my 4th one. I feel the need to double the ingredients to make a larger batch!

Brownies last up in the fridge up to 7 days or freeze extremely well. Texture may be slightly altered though.
