4-Ingredient Chocolate Protein Bites (Vegan + GF)


A 4-ingredient chocolate protein bite that is no-bake, vegan, gluten-free, and refined sugar free? Count me in! For the past couple years, quick food processor snacks have been my favorite things to make because of easy clean up. Making snacks at home also beats store-bought grocery snacks because you know what you are putting into the snack! Since eating whole foods is highly recommended, I wanted to use natural protein sources in these protein bites. I try to avoid protein powder even though I haven’t really heard of any negatives of protein powder, but I definitely know that walnuts and sunflower seeds are high in protein so I opted for them!

I saw some similar protein bites at my local grocery store selling for $11.99/lb. which can add up since protein bites can be quite heavy. They added hemp seeds into their recipe which I think is a great idea so feel free to customize this recipe however you would like! Some great add-in include dried fruit pieces, other nuts, dark chocolate chips, and more.


4-Ingredient Chocolate Protein Bites

yield: 20 bites

Ingredients:

  • 1 1/2 c. raw walnuts
  • 1/2 c. cocoa powder
  • 1 c. dates soaked in hot water (I used deglet noor dates)
  • 1/8 c. toasted and unsalted pumpkin seeds.

Directions:

  1. Throw the first 3 ingredients into a food processor and process until all ingredients are incorporated.
  2. Stir in the sunflower seeds and pack into a square pan lined with parchment paper and cut bites into squares. It may help to refrigerate the mixture for at least 30 min. for easier cutting.

These protein bites can last in the fridge for up to 2 weeks when placed in a dry and air tight container! I like to bring 2 or 3 bites on the go or as a post-workout snack since they’re very easy to bring and mess-free. The dough should not be overly sticky so they should not make a mess when you eat them.
