Beef Soboro Donburi (Beef Rice Bowl)

Don’t you love all-in-one dishes that include carbs, proteins, fats, and vegetables? Then this soboro donburi ticks all those boxes! Soboro Donburi is a Japanese dish, and its name roughly translates to food cooked into crumbled pieces over rice. The crumbled food refers to ground meat (usually chicken), but most people add eggs and a green vegetable like okra or green beans for a more balanced meal. I decided to stray away from the classic and used beef instead of chicken, while also adding carrot as an additional topping. The dish is easily customizable; you can even add a pop of red with red bell peppers or purple with purple cabbage. It’s all up to you.

The dish is very flavorful with lightly seasoned vegetables and eggs, and ground beef cooked in a salty and slightly sweet sauce. When plating the dish, you can arrange the toppings over rice in a bowl or in a linear fashion in a bento box. Apart from meal prepping, I used a bento box because I like how the dish looks in a rectangular container.

Beef Soboro Donburi

Yield: 4 bowls

total time: 30 min.


  • 4 c. cooked white rice
  • Furikake to top, optional

For beans:

  • 185 g. or 1 1/2 c. frozen green beans, cut into shorter pieces
  • 5 g. or 1 tsp. sesame oil
  • 5 g. or 1 tsp. soy sauce

For eggs:

  • 4 eggs
  • 1 g. or 1/8 tsp. salt

For carrots:

  • 170 g. or 1 ½ c. shredded carrots
  • 1 g. or 1/8 tsp. salt

For beef (this makes a little more than 4 bowls worth):

  • 450 g. or 1 lb. ground beef (85% lean)
  • 32 g. or 2 tbsp. soy sauce
  • 16 g. or 1 tbsp. mirin
  • 13 g. or 1 ½ tbsp. brown sugar
  • 2 g. or 1 tsp. ground ginger
  • 1 g. or 1/8 tsp. salt
  • 1 g. or ¼ tsp. white pepper


  1. Saute the green beans with sesame oil and soy sauce for 5 min. or until cooked. Set aside.
  2. Whisk together the egg and salt. Lightly grease a pan and scramble the eggs. Stir constantly while breaking apart the eggs into crumbled pieces with your spatula. Once scrambled, set aside.
  3. Saute the carrots with salt for 2 min or until cooked. Set aside.
  4. In a pan, add ginger and saute for 20 seconds. Add mirin, white pepper, soy sauce, and brown sugar. Stir and bring to a simmer. Add in the beef and stir. Cook for 10 minutes or until cooked. Season with salt as needed. Drain the fat and set the beef aside.
  5. To assemble one serving, add 1 cup of rice into a bowl or bento box. Spoon on some eggs, beef, carrots, and green beans. Sprinkle the top with furikake. Repeat for the remaining bowls.

The rice bowls can be refrigerate in an airtgiht container for up to 3 days.
